This salsa takes 15 minutes and uses four things you grew yourself: tomatoes, jalapeños, cilantro, and onion — the exact varieties in the Salsa & Sauce Garden Kit.

Ingredients

  • 3 medium homegrown tomatoes, diced
  • 1–2 homegrown jalapeños, seeded and minced (leave seeds in for heat)
  • ¼ cup fresh homegrown cilantro, chopped
  • ½ homegrown onion, finely diced
  • Juice of 1 lime
  • ½ tsp salt

Directions

  1. Dice the tomatoes and drain excess juice for 5 minutes in a colander.
  2. Combine tomatoes, jalapeño, onion, and cilantro in a bowl.
  3. Stir in lime juice and salt. Rest 10 minutes so the flavors marry.
  4. Taste — add more jalapeño for heat or lime for brightness.

Harvest tips

Pick tomatoes when fully colored and slightly soft. Cut cilantro stems 2 inches above soil and it regrows for a second harvest. Jalapeños are ready green, or leave them to redden for a sweeter, hotter salsa.
